During this coming month of July we will carry out new demonstrations of radiofrequency defrosting of frozen blocks of meat and fish.
For this purpose, we will have a continuous tunnel of our represented STALAM.
Typical processing times for 15-20 kg blocks are 20-25 minutes, during which time temperatures from -18ºc to -3ºc are uniformly and evenly distributed.
This new technology makes it possible to rationalise the raw material to be defrosted according to the daily production. It also drastically reduces defrosting losses typical of steam chambers and contamination.
Its use offers in many processes the alternative, depending on the market, of buying fresh or using frozen stored product, thus being able to control price fluctuations of the raw material.
